It is too bad that coconut oil’s true benefits went largely unnoticed and unaccepted by the nutrition and diet industry in recent times.  Wrongly affiliated with many of the “bad” saturated fats, coconut oil has been blamed (and wrongly accused) for many years as a cause of increased cholesterol levels, and risk for heart disease.  Because heart disease is the number one killer in America, it is easy to see how any “oil” quickly gets labeled as “bad”.

Coconut oil is an edible oil that has been consumed in tropical places for thousands of years.  It was once prevalent in western countries, including the United Sates.  Popular cookbooks advertised it at the end of the 19th century.  With a long shelf life and a melting point of 76 degrees, it was a favorite in the baking industry.  But a negative campaign against saturated fats in general - and the tropical oils in particular - led to most food manufacturers abandoning coconut oil in favor of the polyunsaturated oils that come from the main cash crops in the United States, particularly soy.
